Red Hot

Among the hottest peppers on earth

These little bruisers are very common in Thailand. They’re called Bird’s Eye chilies, and they’re only about an inch or two long, including the stem. But their size is deceptive, because they pack a wallop. The way they’re most commonly used is to sun-bake them on a plate on the roof of the house (which is where I found this particular platter of lava), and afterwards mash them to powder and mix them with fish oil. This infusion can then be drizzled over food to instantly make it nuclear-strength. A teaspoon on a family-sized platter of rice, for instance, is all that’s required to bring tears to the eyes. Be careful if you ever get a chance to try them.
